18 Reasons: Chicken Butchery and Southeast Asian Cookery

Chefs Gracie and Linda absolutely love to collaborate with each other. This is their third iteration of a butchery and South East Asian cooking class and they cannot wait to show you how much deliciousness can emerge from the humble chicken! In this class, students will work in pairs to butcher a whole chicken with Chef Gracie, and then transform each piece of chicken into a magnificently flavorful South East Asian dish with Chef Linda. Students will leave with the confidence to purchase and butcher a whole chicken, the knowledge of how each cut needs to be cooked to optimize texture and flavor and an array of incredible South East Asian cooking techniques and recipes!
